Briam

Serves 6-8

  • 1 Kg Zucchinis
  • 1 Kg Potatoes
  • 1 Kg Eggplants
  • 1 Green pepper
  • 3 Sliced onions
  • 2 Thinly sliced
    green onions
  • 1 Kg Ripe peeled
    tomatoes
  • 1 batch Diced parsley
  • Salt
  • Pepper
Clean and chop all the vegetables in large pieces. Bake in a deep pan for about 1 1/2 hr (medium oven).
