Lamb “Fricasse”

Serves 5

  • 1 Kgr Lamb leg
  • 1 1/2 Kgr green onions (chopped)
  • 2-3 heads lettuce (chopped)
    (dandelions work best if you can find them)
  • 1/2 cup butter
  • 2 eggs
  • Juice from 1 lemon
  • A little flour
  • Salt & pepper

Cut the lamb in portions. Brown in a pot using the butter. Strain excess fat. Add salt & pepper, the lettuce, the onions, very little water, cover and simmer for about 1 hr. (if you are the adventurous type, do try to find dandelions, but be warned, they are very bitter)
Prepare the avgolemono sauce.
Pour the avgolemono in the pot, simmer lightly and serve hot.
